Managing Food Waste in the Caribbean

In 2017, Dr Lystra Fletcher-Paul of the Food and Agriculture Organization (FAO) reported that the Caribbean and Latin America waste a staggering 78 million tons of food annually, which totals 6 per cent of global food production, and Trinidad and Tobago is the most wasteful country in the region.

Although this statistic is daunting, to say the least, there has been work happening in this space that the webinar will shine a light on.

Jordann Norbert, Sustainability Director @Norbert’s Educational Resource Development (NERD) Enterprises

Jordann Norbert, a Jamaican native holds a BSc. in Hospitality and Tourism Management from the University of Technology, Jamaica and an MSc. in Executive Leadership in Hospitality Management from Monroe College. For the past 8 years, she has served as an educator in St. Lucia where she has also resided for the past 10 years. She is also the Sustainability Director of her organization Norbert’s Educational Resource Development (NERD) Enterprises. She has always had a passion for education and sustainable development specifically within the Hospitality and Tourism sector. Under this role, she operates as a Sustainable Food and beverage/Hospitality trainer and engineer. She was awarded Island Innovation Ambassador 2022 for St. Lucia and has made it her mission to bring awareness to the importance of better management and prevention of food waste within the hotel food service and food and beverage industry overall through the launch of the organization’s “Green Cuisine Initiative”.Through this program, she provides training and certification to culinary and food service professionals in Sustainable Food and Beverage Management related courses and workshops as well as linking clients with the resources and assistance needed to make that transition. The program is also being featured as an upcoming project under the Caribbean Climate Smart Accelerator Organization. In addition to this, she is also a Sustainability Education for Culinary Professionals trainer with the World Association of Chef’s Society in France.

Jordann believes that it is through education, development, and training that awareness will be
increased in this regard and a change will be made within the sector to be more environmentally
conscious whilst bearing in mind the sector’s impact on local communities.
Since launching her business, she had been crowned 2nd runner-up for the National
Entrepreneurship World Cup competition in 2021 in St. Lucia.


Sian Cuffy- Young, Waste Management Educator, Consultant and Social Entrepreneur

Sian Cuffy-Young has been involved in the environmental field for over fourteen (14) years. She
is no stranger to challenge as her experience stems from the waste and mining sectors – two fields
many shy away from. She also has a wealth of experience in environmental management systems and education and has received training in behaviour change through the method of community-based social marketing with the University of Tennessee. She is a Colorado Certified Environmental
Educator, Speaker and Principal Consultant of Siel Environmental Services Limited. Her work involves working with schools through her waste education programme, with SMEs and the large corporate company to help them become more waste efficient, to communicate their environmental strategies and staff training and consulting and also has created an online learning platform for waste-related issues for example composting and a short course in Waste management with UWI.

Her academic qualifications include a B Sc (Hons) degree Double major in Physics and a Master’s in
Environmental Engineering from the University of the West Indies, St. Augustine, Campus and a
Diploma in Environmental Management from Galilee College, Israel. She is also a Fulbright Hubert
Humphrey Fellow from Cornell University where she specialized in Quarry rehabilitation and is a
graduate of the prestigious Shell LiveWire programme for young and upcoming entrepreneurs. She
was recently awarded the Kenneth Valley Foundation Progress award for her work in environmentalism and advocacy as well as her company received the award for being the Best Waste Education Company in the Caribbean by BUILD Magazine.
